Both version should work. There was an issue with the 5.0 GA version which was fixed with VMware vCenter Converter Standalone 5.0.1.
Any tips how to upgrade ESXI to 5.0 to 5.1.
If you have Update Manager installed, this would probably be the way to go. Depending on the number of hosts, you could also consider to e.g. upgrade the hosts interactively using the CD-ROM.
