Well, I would recommend the same method suggested by Woodyz.
There's one more way however .
If you go to VM settings > Default app . there's an option to populate your Mac's application folder with Windows applications ( non default widnows apps which in you case Quicken ) . You just need to ensure that "Run Windows applications from your Mac's Applications folder" is checked and click on restore applications.

By doing so, you can launch Quciken app just like any other mac app by going to applications folder or searching it in spotlight. You can then also place the icon on dock.
If i were you, I would choose method one.
