I tried both the removal of the missing piece and replacement with your empty VDMK segment.

 

The removal worked best - as Windows was able to rebuild the NTFS volume and I found some of the files I needed in the found.000 folder created.  So it wasn't a total loss - just 80%.

 

I learned a lot about the structure of these files and about Time Machine and about backing up the VM and it's data.
